There are many new designer restaurants opening up all around Rome but still thankfully, the best way to experience Rome is to do what the Romans do, eat late at a local trattoria and go for a nice gelato afterwards.
There's food for everyone here and it's integrated into the whole Roman way of life. Most of the eating is still done in the neighbourhood trattoria, where the majority of these are still family-run. Try the traditional Roman dishes, such as spaghetti all'amatriciana or saltimbocca.
Eating out in Rome is better than ever before, and though prices have risen since the introduction of the euro, you can still be shocked at how cheap you can get a fantastic meal, you just have to look harder for those bargain restaurants.
Generally, the Roman's eat in this order, antipasto [hors-d'oeuvre], primo (usually pasta, occasionally soup), secondo (the meat or fish course) and dolce [dessert] and always café and a digestive [grappa, limoncello or scropino]. This may sound like a lot but it fit in over a 3 hour period and you'll soon understand why the Italians love their food so much.
